Creamy Mac and Cheese two ways

Forget using boxed mac and cheese especially the ones with the powered cheese packet. These 2 mac and cheese dishes will satisfy anyone who loves a good mac and cheese without sacrificing your health. The first one is a typical mac and cheese, the kind I had as a kid out of the box and the second is a little healthier adding broccoli to get in an extra veggie. Both are delicious, I hope you enjoy. Ingredients: 1 box gluten free pasta I used these elbows for the first dish and these shells for the second dish 1/4 cup grass fed butter 1/4 cup brown rice flour 1/2 teaspoon salt 1/4 teaspoon black pepper 2 cups unsweetened plain almond milk 2 cups shredded goat cheddar Directions: Cook macaroni according to package directions. In medium saucepan, melt butter over medium heat. Stir in the flour, salt and pepper. Stir in the milk. Cook for 5 minutes then stir in the cheese and cook until melted. Drain macaroni, add to cheese sauce and stir until all is c

Gluten Free BBQ Chicken Pizza

BBQ chicken pizza is my husband's favorite pizza and now my kids want to have it any time my husband gets it. My goal was to make one just as good as their favorite pizza place but free of all the junk that comes with take out pizza. This pizza was a success! Everyone enjoyed it, including my husband who has been eating BBQ chicken pizza from the same place for at least the last 10 years. Ingredients per crust: 2 Chicken cutlets breaded in Gillians bread crumbs or grilled chicken cut into cubes 1/4 cup BBQ sauce (make sure it's clean and free of all artificial ingredients) I used OrganicVille 1/4 cup (or more if you want it more cheesy) Goat mozzarella shredded (You can use regular mozzarella if you eat cow's milk, just make sure it's organic) Gluten free Crust (We've made this on Udi's GF Crust  shown above and Kinnikinnick GF Crust ) Directions :  Place cubed chicken in a bowl and toss with BBQ sauce.
