Dr. Mark Hyman

I first saw Dr. Mark Hyman on PBS Blood sugar solution program. I was instantly glued to the TV for the entire show. He has so much incredible information. He makes it very clear that the way we eat truly affects our health. If you don’t already know him and follow him, I suggest that you do. I felt like he was taking everything I believe about eating real food right out of my head and saying it. Most of you know how strongly I feel about eating well and eating real food to improve your health and that is just what Dr. Mark Hyman talks about! Gluten Free Wraps

I’ve always loved wraps, before going gluten free I would put everything on a wrap, eggs, burgers, chicken salad, grilled chicken with veggies, pretty much anything you would put on bread or a roll I would use a wrap. After going gluten free, I was disappointed that I could not have wraps. I found some brown rice tortillas, but when trying to make a wrap they would break apart. Recently I was on vacation in Montauk, NY (anyone going there that is looking for healthy food not just gluten free, but organic and nutritious needs to visit Joni’s ) I got my breakfast and lunch there almost every day! When I saw gluten free wraps on the menu, I was hesitant but they had them rolled up and stuffed with anything you’d like and they didn’t crack! I had to ask them what they used and then I got to work experimenting on ways of rolling them without them breaking. I am now very happy to have discovered a great technique that seems to make them pliable and easily rolled. I use Food for life brown...

Chicken Salad

Ingredients 2 chicken breasts cooked (I usually buy a rotissieri chicken and use the breasts for salad) or you can cook 2 split chicken breasts and use them. salt and pepper 1/4 cup mayo (any kind is fine, I use Soy Free Veganaise ) 2 celery stalks 1 small yellow onion Directions Cut the chicken into cubes and place in a bowl. In a food processor, combine celery and onion and process until finely diced. Add to the chicken. Add the mayonnaise, salt and pepper and mix until combined. Enjoy on a sandwich, on a salad or in a wrap.

Kale and Veggie Salad (gluten, dairy, corn, soy and refined sugar free)

This salad is a great addition to any meal. You can add some chicken, quinoa or salmon on top and make this a perfect meal! Ingredients Salad 1 bunch kale chopped into bite size pieces 1 red bell pepper sliced 1/2 red onion sliced 1 zucchini sliced 1/2 cup kalamata olives cut in half Dressing 1 tablespoon apple cider vinegar 2 tablespoons olive oil salt and pepper Directions Mix Dressing ingredients in a jar and shake until blended. Add all your veggies and olives in a large bowl and pour dressing mixture over it. Toss until well coated. This taste even better the next day, so you can make this the night before and store in a container with lid and have it the next day for lunch!
