Chicken Salad

Ingredients
2 chicken breasts cooked (I usually buy a rotissieri chicken and use the breasts for salad) or you can cook 2 split chicken breasts and use them.
salt and pepper
1/4 cup mayo (any kind is fine, I use Soy Free Veganaise)
2 celery stalks
1 small yellow onion

Directions
Cut the chicken into cubes and place in a bowl. In a food processor, combine celery and onion and process until finely diced. Add to the chicken. Add the mayonnaise, salt and pepper and mix until combined. Enjoy on a sandwich, on a salad or in a wrap.
