Spinach and Quinoa Breakfast Scramble (gluten, dairy, corn, soy and refined sugar free)


1 tsp earth balance buttery spread or regular butter
large handful of baby spinach
salt and pepper
1/4 cup cooked brown rice
1 eggs


In a pan, heat the butter of your choice. Add the spinach and cook until softened.

Add salt and pepper. Add the cooked Quinoa and cook until heated through.

Scramble your egg in a bowl then pour them over the spinach mixture and cook for another couple of minutes until the egg is cooked. Enjoy!
