Salmon Fish Sticks (gluten, dairy, corn, soy and refined sugar free)

1 center-cut salmon fillet, about 9 by 4 inches, skinned
2 eggs
1 cup seasoned GF bread crumbs
Olive oil spray

Preheat the oven to 450 degrees F.

Rinse the salmon and pat dry with paper towels. Cut the fish into piecesabout 1/2 by 1/2 by 3 inches in size.

Place the eggs in a bowl and beat. Put the bread crumbs in another bowl.

Dip the salmon in the eggs and then into the Bread Crumbs.

Place the breaded salmon pieces on an oiled baking sheet. Spray tops with olive oil spray.

Bake for about 15 minutes until golden brown.
